Fix substitution of pretty quotes in code in easy-mmode

* lisp/emacs-lisp/easy-mmode.el (easy-mmode--arg-docstring): Adjust.
(easy-mmode--mode-docstring): Avoid making quotes into pretty
quotes in code (bug#50968).
