Be explicit about missing sections in eshell manual

* doc/misc/eshell.texi (Writing a module, Module testing)
(Directory handling, Key rebinding, Smart scrolling)
(Terminal emulation): Explicitly say that these sections remain to
be written.  (Bug#49306)
