Eglot: introduce eglot-events-buffer-config

* doc/misc/eglot.texi (Eglot Variables): Reword.
(Performance): Reword.

* lisp/progmodes/eglot.el (eglot-events-buffer-size): Obsolete.
(eglot-events-buffer-config): New customization variable.
(eglot--connect): Use eglot-events-buffer-config.
