New m-x eglot-stderr-buffer useful for debugging

* eglot.el (eglot--make-process): Save stderr buffer in process.
(eglot-stderr-buffer): New interactive command.
(eglot--mode-line-format): Bind C-mouse-1 to new
eglot-stderr-buffer.
