Improve eglot tests on emba

* test/infra/gitlab-ci.yml (test-eglot): Use packages company and
yasnippet.

* test/lisp/progmodes/eglot-tests.el (eglot--call-with-timeout):
Skip on emba in case of timeout.  (Bug#78730)
